At Fiskano we offer a wide variety of fish caught by local fisherman all over the world. This time we will highlight the Deep-water Red Snapper and Crimson Snapper from Kenya. These Kenyan snappers are caught in the Indian Ocean (FAO 51) and are famous for their color tone that changes during the aging process.
The fish can grow to a size of 150cm and is often found near coral reefs and mangroves, freshwater streams and tidal creeks. It’s therefore a fish that’s mostly caught by hand and without the use of trawlers.
Both Kenyan snappers are scaled and the pin bones are removed. We can offer this in the sizes 300-500, 500-800, 800-1200, 1200-1500, 1500-2000 and 2000/+ gr/pc. It is a delicious table fish that contemplates a sweet taste with firm white flesh.
The Kenyan snapper can be prepared in many different ways. The fish tastes great when it’s cooked or baked and combined with rice, veggies and herbs. But it’s also one of those fishes that tastes great when prepared on the barbecue or in a fish stew.
